I’ve been on a weight loss journey for over a year.  It’s been incredibly interesting realizing that one need not exist on carrots and celery alone to lose weight!  What?!  You can have your cake and eat it, too??!!  Yup!!!

One of my favorite guilt-free recipes (outside of yogurt pie, I’ll save that for another day) is cake!

Try this out for size. . . buy any cake mix you would like and instead of adding fattening and eggs to the recipe, simply, substitute a 12 ounce diet soda for the eggs and oil. Seriously.

The other day, I took a 94 cent box of devil’s food cupcakes, added 12 ounces of Cherry Coke ZERO, mixed it together, baked them.  DELICIOUS!  They were so moist and flavorful.  Tip!  Take a tub of fat free Cool Whip and a jar of marachino cherries, add the cherry juice to the whip cream, chop up the cherries and add it to the Cool Whip for frosting.  Yum!!!!  Another option for chocolate “frosting” is to add unsweetened cocoa powder to the cool whip.

Seriously.  Try it!!!
